How to bake pizza at home.

To get a delicious and beautiful-looking pizza at home, you do not need a professional oven and outstanding culinary skills. Just spend a little time to find the best recipe for you and start experimenting with baking. In fact, a home oven and pizza steel, stone or sheet pan are enough. Due to the fact that this type of equipment usually reaches a maximum temperature of 250°C, in exceptional cases 300°C, thin sheets are not able to accumulate enough energy to brown the bottom after dropping the pizza from the shovel and not burn the top. In the case of chamotte or granite stones, the situation is better, because they have a large mass that allows them to accumulate a large amount of energy. However, they don't give it back fast enough. On the other hand, pizza steel has a greater mass than popular stones, and at the same time is an excellent thermal conductor. Thanks to these two features, pizza baked on steel can be ready in 2-2.5 minutes, achieving a baked bottom, juicy toppings and undried edges.
